Every Red Dead Redemption 2 story mission by chapter, from Colter to Beecher's Hope: optional honor missions, how to replay a mission and what the ending depends on. No spoilers.
How many missions RDR2 has
Red Dead Redemption 2 missions make up a story split into 6 chapters and two epilogues. Rockstar never gave an official mission count. Red Dead Wiki counts 109 missions: 94 story missions and 15 honor missions, extra jobs from gang members and acquaintances that affect Arthur's honor. 100% requires 107, and some guides give 104–110 depending on whether cutscenes and multi-part missions are counted. So the honest answer is over 100.
The order within each chapter is flexible. Chapter 2 is especially open: you can take its missions in almost any sequence.

Stranger missions and side jobs
Beyond the story, RDR2 has Stranger Missions, marked with a question mark on the map. The wiki counts 31 such questlines; five of them (Money Lending and Other Sins, Help a Brother Out, Brothers and Sisters, One and All, Do Not Seek Absolution, Of Men and Angels) count as honor missions and so appear in the list above. Others include "The Noblest of Men, and a Woman" about legendary gunslingers, "A Test of Faith" about dinosaur bones, "Duchesses and other Animals" about exotic animals and "Geology for Beginners" about rock carvings.
Some Stranger questlines are needed for 100%; the list is on the collectibles and 100% page.
RDR2 endings without spoilers
Arthur's story has several possible endings. They depend on two things: honor level (how you've behaved through the game) and a choice the game offers near the end of Chapter 6. After that the Epilogue begins; it's mandatory, and it's where the rest of the map opens. We deliberately don't describe the ending.
Cheats can shift honor quickly, but they disable saving. The list is on the RDR2 cheats page.
How to replay a mission
Completed missions can be replayed from the progress menu (Pause → Progress, story section). Replays are useful for gold medals: every mission has extra objectives such as time or shooting accuracy, and your result shows in the same menu.
The characters you meet in missions are on the RDR2 characters page, and the map of the states is on the RDR2 map page. Everything about the game is on the Red Dead Redemption 2 page.
